tonight is another night of veggies! I made a simple delicious healthy kale salad! I hope you enjoy this one ❤️
Preparing the Butternut Squash:
preheat the oven to 425 degrees
Clean your butternut squash, cut in half and scoop out the seeds
puncture the veggie with fork all over
on the skin, rub in olive oil (this will help us be able to peel the skin off when it’s done cooking)
on the open parts of the vegg, put melted butter.. rub it all in and add salt and pepp
place on your baking tray face up to give a nice roast
half way in between cooking flip them so they are facing down which will help steam the veg
you’ll know they are ready when you can easily puncture with your knife and it goes thru the squash without resistance
baking will be about 45 minutes but could be sooner. just check around the 30 minute mark to see how it’s going:)
When it’s done, you can take it out and begin peeling the skin off using tongs… sometimes it pops right off, and other times you make need assistance using your knife just gliding it off the vegg
once all the skin is removed, i slice the squash and pour some butter and add some salt since this side was covered with skin during cooking time
This will leave you with plenty left over depending how many people are eating. one half of the squash was enough for 3 salads. Put the rest in your fridge for easy prep for other meals during the week ❤️
Preparing the kale!
wash and rip into smaller pieces… tear away the stalky parts of the leaf so you’re only getting leaf
dressing!
in a mason jar add:
olive oil (I ran out so I only was able to put a little bit in and then I used some left over melted butter I had from some vegg and put that in too lol)
Juice of 2 lemons and juice of 1 lime
white wine vinegar
honey
salt and pepp
SHAKKEEEE
pour over the kale and massage it all in until it’s tender
let that rest to the side
Veggies for Salad
I used tomatoes, green beans and peppers from the garden. I also used red onion and cucumbers!
Once I prepped all of these below, I squeezed lemon juice and put a lil salt on everything and let that sit until I was ready to assemble
Cucumbers - diced
Tomatoes cut up however you like
green beans, sliced into cute baby discs
hot pepper sliced and diced
red onion cuz in half and sliced so they are half moons
ASSEMBLE:
place kale in your bowl
lay your sliced butternut squash in (or cubed)
Next, add in your cucumbers, tomatoes, onions, green beans and peppers
squeeze lemon juice over the top and enjoy!
