Kale Caesar Salad and Mamas Ribs!

One thing I constantly crave is a gooooood Caesar salad/wrap. I’m a sucker for it. If I go to a steakhouse or a fancy restaurant that’s what I’m ordering cause it’s ALWAYS THE BEST. So I saw a few recipes making homemade Caesar dressing using Greek yogurt so of course I tried it out. Here’s how I did it!

 

DRESSING:

I measure with my heart and eyes and what I think will make a good ratio. Start out with less and build on it. Play with it. Just have fun experimenting in the kitchen. Like when we were kids making nature potions 😭🤣

- maybe about 1/4th cup of Greek yogurt (I used 5% fat type by Fage)

- table spoon of country Dijon mustard 

- tablespoon of Worcestershire 

- zest of some lemon 

- juice of one lemon 

- grate your garlic in there (I used 4 cloves) 

- grate in as much fresh Parmesan as your heart desires 

- onion flakes or powder 

- fresh cracked black pepper and a dash of salt 

-  start mixing everything together and slowly mix in your olive oil until it’s the consistency you like. 

- give it a try and add whatever you think it’s missing 

 

KALE

- wash and prep the kale. 
- rip into smaller pieces and remove any of the stalks 

- once it’s ready, juice one lemon in there and massage your kale ((now is a good time to infuse life force energy into your kale as you massage it. Add your lovely nutritious intentions into your food)) 

then, pour in a little dressing and massage that into the kale 

and then pour the rest of your dressing in! Mix mix mix 

top with shallots, fresh parm shavings and croutons

YUMMMMMMMMMMMM 

 

MAMAS RIBS: 

- my mom boils her ribs first to cut some of the fat… she puts the rib rub and some bbq in the water to boil with the ribs (boil about 30-40 mins)

((my mom and my uncle make the best ribs. As a kid growing up, I’d eat the ribs as my uncle would remove them off the grill 🤣 ))

- take them out and put them in gallon freezer bag and get them coated in the rub and bbq sauce & let them marinate til you’re ready to cook 

- there are two ways you can do this. You can bake them in the oven and finish them in the grill or just go straight to the grill. It really depends on how you like to eat your ribs. 
the oven will help the meat separate and slide off the bone like butter. Adding them to the grill will give them a nice char after oven baking 

OR you can go straight to the grill if you enjoy eating the meat off the bone 

truly depends on your preference. 

On the grill they take about 15 mins or so since you boiled them ahead of time and if they’re already baked then you prob don’t need much time on the grill. Just enough to give a nice char glaze 

AND FREAKIN DONE 

messy and delish. 
I plated the ribs on top of the salad for the presentation but ended up getting a paper plate. This is a delicious messy meal. 🥂🥂🥂🥂
